Ingredients:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup buttermilk
- 2 large eggs
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Oil for frying
- 1 cup semisweet chocolate chips
- 1/4 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- Sprinkles for decoration optional
Instructions:
In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt
In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix
Heat oil in a deep fryer or large, deep saucepan to 350F 175C
Drop spoonfuls of the donut batter into the hot oil, frying until golden brown, about 2-3 minutes per side
Remove the donuts with a slotted spoon and place them on paper towels to drain excess oil
In a microwave-safe bowl, melt the chocolate chips and heavy cream in 30-second intervals, stirring until smooth
Stir in the powdered sugar and vanilla extract to make the chocolate glaze
Dip each donut into the chocolate glaze, allowing any excess to drip off
Decorate with sprinkles if desired
Let the glaze set for a few minutes before serving
