- 2 medium beets, peeled and diced
- 1 ripe avocado, peeled and diced
- 1/2 cup raw cashews, soaked for 2 hours
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste

Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic, saut until fragrant
Add diced beets and saut for 5 minutes, stirring occasionally
Pour in vegetable broth and bring to a boil
Reduce heat to simmer and cook until beets are tender, about 20 minutes
Meanwhile, prepare the cashew cream by draining soaked cashews and placing them in a blender
Add 1/2 cup of water and blend until smooth and creamy
Once the beets are tender, add diced avocado to the pot and cook for an additional 5 minutes
Remove the soup from heat and let it cool slightly
Then, carefully transfer it to a blender and blend until smooth
Return the blended soup to the pot and reheat if necessary
Season with salt and pepper to taste
To serve, ladle the soup into bowls, drizzle with cashew cream, and garnish with chopped parsley or cilantro
