A wickedly delicious vegan ramen packed with umami flavors from mushrooms, miso, and soy sauce. Its comforting, satisfying, and perfect for a cozy night in.
Ingredients:
- 4 cups vegetable broth
- 2 cups water
- 2 packs of vegan ramen noodles
- 1 cup sliced shiitake mushrooms
- 1 cup sliced bok choy
- 1/2 cup sliced green onions
- 1/4 cup soy sauce
- 2 tbsp miso paste
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tsp sesame oil
- 1 tbsp chili garlic sauce optional
Instructions:
Bring water and vegetable broth to a boil in a large pot
Soy sauce, miso paste, garlic, ginger, sesame oil, and chili garlic sauce if using should all be added
This is followed by the bok choy and green onions
Put it on low heat for 5 minutes to mix the flavors
Follow the directions on the package to cook the ramen noodles separately
Put the noodles into bowls after they are done cooking
Add the hot broth to the noodles and serve right away
If you want, you can add more sliced green onions as a garnish
