This vegan almond feta-style cheese is a creamy and tangy alternative to traditional feta cheese. Its perfect for salads, sandwiches, or as a topping for crackers.
Ingredients:
- 2 cups almonds, soaked overnight
- 1/4 cup lemon juice
- 2 tablespoons nutritional yeast
- 1 clove garlic
- 1/2 teaspoon salt
- Water, as needed
Instructions:
Drain and rinse the soaked almonds
In a food processor, blend almonds, lemon juice, nutritional yeast, garlic, and salt until smooth, adding water gradually until desired consistency is reached
Line a sieve or cheesecloth over a bowl and pour the almond mixture into it
Wrap the cheesecloth around the almond mixture and press down gently to shape it into a cheese-like form
Refrigerate for at least 4 hours or overnight to firm up
Once firm, remove from cheesecloth and serve as desired
