Ingredients:
- 1 small butternut squash, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces udon noodles
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced
- 1 tablespoon sesame seeds, toasted
Instructions:
Preheat oven to 400F 200C
Toss the diced butternut squash with olive oil, salt, and pepper on a baking sheet
Roast the squash in the preheated oven for 25-30 minutes or until tender and slightly caramelized
Cook udon noodles according to package instructions
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add minced garlic and grated ginger, cook for 1 minute
Add the roasted butternut squash and cooked udon noodles to the skillet
Pour in soy sauce and sesame oil, toss to combine and heat through
Remove from heat and garnish with sliced green onions and toasted sesame seeds
Serve hot and enjoy
