Ingredients:
- 6 slices bacon, cooked and crumbled
- 8 large eggs
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 1/4 cup chopped green onions
- 1/4 cup diced tomatoes
- 1/4 cup diced bell peppers
- 4 low-carb tortillas
Instructions:
Set the oven to 350F 175C and heat it up
Add eggs, heavy cream, salt, and pepper to a bowl and mix them together using a whisk
Set a skillet that doesnt stick on medium heat
Add the egg mixture and stir it around a few times to make the eggs scrambled but still moist
Put a few scrambled eggs in the middle of each low-carb tortilla to make a meal
Add cheddar cheese crumbles, chopped green onions, diced tomatoes, and diced bell peppers to the top of each tortilla
Put the tortillas in a baking dish seam-side down and roll them up tight
Cover the enchiladas with any extra cheese and toppings you have left
Put it in an oven that has already been heated and bake for 15 to 20 minutes, or until the cheese melts and bubbles
Enjoy while hot
