Ginger Lemon Coconut Granola

This vegan granola is very easy to make and tastes great with ginger, lemon, and coconut. Its a great way to start the day with something healthy or as a snack at any time.

Ingredients:

  • 3 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup chopped almonds
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 tablespoon grated ginger
  • 1 tablespoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions:

Warm the oven up to 325F 160C

In a large bowl, mix together the rolled oats, chopped almonds, grated ginger, lemon zest, ground cinnamon, and salt

Melt the coconut oil and mix it with the maple syrup in a different bowl

Add the wet mixture to the dry ones and mix them together until they are well blended

Place the granola mix on a baking sheet that has been lined with parchment paper and spread it out evenly

Bake for 25 to 30 minutes, stirring every 15 minutes, until golden brown and smelling good

Let the granola cool completely on the baking sheet before putting it away in a container that wont let air in

You can eat it as a snack or with your favorite plant-based milk or yogurt
