Ingredients:
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1 lemon, juiced
- Fresh cilantro or parsley for garnish optional
Instructions:
Layer all ingredients, except lemon juice and garnish, in a large mason jar in the order listed
Seal the jar tightly and store in a cool, dry place until ready to use
To prepare the soup, empty the contents of the jar into a large pot
Add 6 cups of water and bring to a boil
Reduce heat and let simmer for 30-40 minutes, or until lentils and vegetables are tender
Stir in lemon juice and adjust seasoning with salt and pepper if needed
Serve hot, garnished with fresh cilantro or parsley if desired
