Moroccan Lentil Soup Pre-made Jar Option

This recipe for Moroccan Lentil Soup is great for making ahead of time or giving as a gift. Putting the ingredients in layers in a jar makes it easy to use on busy days. With lots of healthy vegetables and tasty spices, its a hearty and filling meal.

Ingredients:

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1 lemon, juiced
  • Fresh cilantro or parsley for garnish optional

Instructions:

Layer all ingredients, except lemon juice and garnish, in a large mason jar in the order listed

Seal the jar tightly and store in a cool, dry place until ready to use

To prepare the soup, empty the contents of the jar into a large pot

Add 6 cups of water and bring to a boil

Reduce heat and let simmer for 30-40 minutes, or until lentils and vegetables are tender

Stir in lemon juice and adjust seasoning with salt and pepper if needed

Serve hot, garnished with fresh cilantro or parsley if desired
