One Pan Pork Tenderloin with Sweet Potatoes and Cauliflower

This one pan pork tenderloin with sweet potatoes and cauliflower is a delicious and easy-to-make meal thats perfect for busy weeknights. The pork tenderloin is juicy and flavorful, while the roasted sweet potatoes and cauliflower add a sweet and savory element to the dish. Plus, since everything is cooked on one pan, cleanup is a breeze

Ingredients:

  • 1 pork tenderloin about 1 pound
  • 2 sweet potatoes, peeled and cubed
  • 1 small head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

Turn on the oven and heat it up to 400F 200C

Add the cauliflower florets and sweet potatoes to a large bowl

Add the olive oil, paprika, garlic powder, thyme, salt, and pepper

Toss the vegetables until they are well covered

Spread out the vegetables that have been seasoned on a baking sheet or roasting pan

On all sides, season the pork tenderloin with salt and pepper

Put the pork tenderloin that has been seasoned in the middle of the vegetables on the baking sheet

For 25 to 30 minutes, or until the pork reaches an internal temperature of 145F 63C and the vegetables are soft and lightly browned, roast the pork in an oven that has already been heated

Take the pork out of the oven and let it rest for a few minutes

Then cut it into slices

To go with the sliced pork, roast some sweet potatoes and cauliflower
