Ingredients:
- 1 cup quinoa
- 2 cups water
- 2 apples, diced
- 6 dried apricots, chopped
- 1/2 cup crumbled goat cheese
- 1/4 cup shelled pistachios, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Rinse the quinoa thoroughly under cold water
In a medium saucepan, combine quinoa and 2 cups of water
Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed
Remove from heat and let it cool
In a large bowl, combine the cooked quinoa, diced apples, chopped apricots, crumbled goat cheese, and chopped pistachios
In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to make the dressing
Pour the dressing over the salad and toss to coat all the ingredients evenly
Garnish with fresh basil leaves
Serve immediately or refrigerate until ready to serve
