Apple, Apricot, and Quinoa Salad with Goat Cheese and Pistachios

This refreshing and nutritious salad combines the sweetness of apples and apricots with the nuttiness of quinoa and the creaminess of goat cheese. The pistachios add a delightful crunch, and the dressing ties everything together with a perfect balance of flavors.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 2 apples, diced
  • 6 dried apricots, chopped
  • 1/2 cup crumbled goat cheese
  • 1/4 cup shelled pistachios, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

Instructions:
